I am so Impressive

OK. So, I like to cook. I am pretty comfortable trying new recipes and adding my own touch to them according to my family's tastes. Usually, they like whatever I fix.
Usually.
*ahem!*

BUT

I don't make anything without a recipe. I just don't. Because I lack confidence. Because I would rather leave the figuring-out-what-tastes-good-together up to someone else. Because who wants to think at the end of the day, anyway? I.use.recipes.

Well, one night not too long ago while I was laying in bed not sleeping, I was thinking about dinner. And I had an idea I wanted to try. So I put it on the menu the next week. (Which was last week...) And the night I made it, Matthew was walking through the kitchen and stopped to ask the obvious, "Whatcha doin'?" (I usually have the computer on the counter so I can follow my recipe. But this dinner was coming right out of my head. Maybe that's why he asked the question. Because he saw I wasn't using a recipe.) When I told Matthew I was making dinner from my own idea, he became very animated. "Really, Mom? This is all your idea? Wow!"
I smiled at his admiration, and left it at that.
However, when we all sat down at the table Matthew announced to everyone, "Mom made up this dinner all by herself. She didn't even use a recipe!" And the rest of the family responded with equal enthusiasm. I reveled in their compliments. I felt so amazing!

And I am quite sure I will NEVER tell them how simple the "recipe" was. Oh, no. I think I'll let them continue to think I am so impressive.

I want the recipe too. I should confess that while I follow a recipe sometimes, I'm not often one to measure. I mean, who wants to wash all the measuring spoons and cups. Especially if it's something I've made before. ;0)

love it! Isn't it wonderful when the kids express how much they like dinner. I have made the most simple--not even recipe---dinners and my daughter, 5yrs old, has said to me "Mom this is the best dinner ever!" I'm too like you when it comes to cooking, I usually go for recipes when trying something new. I love cooking, but I'm definitely not a natural. I love those easy dinner nights.***Chera

OK, Angela, Patricia and KM, here you go:
I sliced sweet potatoes about an inch thick and put them in a greased 9x13 dish. Sprinkled with cinnamon and baked them for about 10-15 minutes at 350. While they were baking I seasoned pork chops with salt and pepper and browned them in oil on both sides.
Took the potatoes out of the oven, poured about 3/4 orange juice over them, placed the pork chops on top and sprinkled them with cinnamon, too. Covered the dish with foil and baked another 25 minutes, or so.
Let me know if you try it, and what changes you make. :)

Chera - My favorite thing is the nights I get to use a dinner I've made on a previous night. You know, when I've doubled the recipe. LOVE easy dinner nights! :)
